How It Began
It Started With a Garage-Sale Oven
Rose Cottage Baking Co. didn't start with a big business plan. It started in 2008 with two little girls shopping a community garage sale for used ovens and bread pans so they could sell homemade cookies at the farmer's market. Owner Rebekah Olson and her daughters mixed their first batches in a 1920s Hobart mixer, baked them in a 1950s double oven, and named their little venture after their home: Rose Cottage.

The First Batch
Two little girls — ages nine and ten — shopped a community garage sale for used ovens and bread pans, then sold homemade cookies at the Cook Area Farmer’s Market. First-day sales: $100.

A Beloved Fixture
Rose Cottage became a familiar face at markets in Cook and Hibbing, with a happy following of customers who kept asking for more — and a dream that kept growing.
2021
Building a Home
Rebekah purchased a small building in Cook and built out the bakery herself — with tradespeople, family, friends, and the carpentry skills her father taught her.
March 2022
The Doors Open
Rose Cottage Baking Co. officially opened as a full-service gourmet bakery, coffee shop, and café at 210 US Highway 53.

Still Growing
With an expanded cooler facility underway at the Cook location, Rebekah’s original vision keeps unfolding — rooted in the same made-from-scratch quality and community spirit that started it all.
“From contractors to plumbers to the carpentry skills my dad taught me — and the wonderful volunteer help of family and friends — we opened in March 2022. We have learned so much, and love the community we get to serve every day.”

Made From Scratch
Ground, Brewed, and Baked Right Here
Every lemonade, chocolate syrup, and vanilla syrup is made fresh in-house. The wheat and rye for our whole-grain breads are stone-ground on site. Locally sourced honey, smoked meats, rhubarb, herbs, and garlic find their way into the menu seasonally, and the coffee is roasted by Duluth Coffee Company, just up the road.
Even the Minnesota-grown wild rice makes its way into our soups, breads, and cookies — a true taste of the Northwoods in every bite.
